On The Menu: Viva La Mexico!

I didn't know I had a theme going until I realized that I sure had a lot of bean burrito recipes. Thank goodness I love me some beans! So this week is Viva La Mexico! I will try a new cuisine every couple of weeks. I'm not trying to go into another grocery store for a while after that first trip.
I found this cool website with international vegetarian and vegan recipes from all over the world. I love trying new spices and flavors and this is right up my alley.
Today's breakfast was two Easy Veggie Fajitas, lunch was Veggie Spaghetti with whole wheat pasta, and dinner was a Chipotle Bean Burrito with Black Bean Salad.

SN: My mom brought my Kale Hummus to work and her co-workers loved it. One said I should open a business. Well, my hummus is only the result of following the directions of a good recipe. Lol. I do, however, plan on making my own vegan baked desserts. I have not found any in the stores and I refuse to believe you can't have a decadent dessert without eggs or milk! I read in the IsItVegan? blog that most Duncan Hines cake mixes are vegan (before the eggs and milk are added). So why not add your egg substitutes, soy or coconut milks, and unsweetened applesauce for oil? You do things their way when we are ill-informed, but once you know better, you do better!
Getting It In On A Budget: Aqua Zumba!
SN: There is a new aquatic center in Richmond, the Greater Richmond Aquatics Partnership, that offers classes for $8 each or $40 a month unlimited on a month to month basis. This is a state of the art Olympic size pool that also functions as a gym. I will visit this one soon.
Fall Events: Celebration Time!!
Fall and Spring are my favorite seasons, even though they seem to be beginning and ending quicker lately. I absolutely cannot wait to pull out my blazers, scarfs, boots and stockings. October will be my high school's 50th year anniversary and the alumni band is getting back together to revisit our youth and celebrate. I will be dusting off my color guard flag and hitting the field for ONE NIGHT ONLY people! LmBo! This should be a site to see! I also haven't seen most of these folks in 18 years so I'm excited. Need a dress for the gala too.
Then there is my GRADUATION!!! I'm finally crossing that stage and getting my BA in Business Management. I need two dresses for this because I will be partying!!
Let's not forget the Monsters Ball thrown by Danja Mowf on Halloween. I still want my girls and I to go as Salt-N-Pepa, but we shall see.

November is Thanksgiving with the family. I hope I can navigate my way through my first vegan holiday. Unfortunately, I will have to prepare my own food, but it gives me an opportunity to fellowship with the family instead of drooling over the turkey and gravy. I'm looking forward to planning a tasty meal and dessert for one.
